I meant to make these cookies over the weekend but was so busy that I couldn’t fit it in. These mint cookies are so easy to make – take any simple sugar cookie recipe, place an Andes mint in the center of a small ball of dough for each cookie, bake at 350 for 12 minutes and you’re done! I decided to melt my left over mints with a bit of butter and drizzle it over the top of each cookie for some added mint flavor. My friend Jessica “created” this recipe when we were in high school {I’ve seen a few recipe variations that are similar to hers since then} and it is always a hit with friends and family.
